Sick all week....

I have been sick all week, I think fighting some sort of
flu bug. So have been sticking to my saltines and 7up.
Not much cooking going on over here.

So I can get some bread made.

Have been doing ok with our envelopes this week.
Had to take money out from another envie for Gas this week.

from previous bags we had bought. Great I was thinking
more FREE Cat food.
But it was a no go, since the coupon amount was more then price
of the item. :(
Dh did pick up some candy bars for .25 each to be resold at the flea
market this weekend for .50 each to double our money. Yay!

Going to see if I have enough energy to go with dh tonight
to WAGS to grab some of the great deals there.

Back on Track with our envelopes

We have been following DR's Plan (Dave Ramsey) of baby steps.
We are trying so hard to get off PS1 (Pre-step 1)
of getting all monthly bills up to date. (Rent, Cable, Electric, etc)
We only have 1 left of the 3-4 we had. So we are doing pretty good.
But for some reason we just can't get the electric caught up.

We should have some money left over each week from hubbies pay check.
Not a ton, but some is better then none. An we go and sell at the flea market
each weekend. So most if not all should be going towards the back bill as well.

For the past 2-3 weeks for some reason another we have been
having to use all the extra money to replenish our other envelopes.
With nothing extra leftover to put towards the back bill.
It is driving me nuts. More then anything I want this caught up
and over with. So we can move on with our steps, and get things rolling.

So I think we are Finally back on track with things.
Dh and I had a talk, and no matter what, no spending extra on
anything else. If we don't have enough money in the grocery budget to
buy milk, or eggs or bread, we will have to do with out for the rest of the week.
Things will even out soon, we just have to get over this hump in the road.

We have all our envelopes funded, and full.
Everything is back on track, and we should be able to put some
money towards the back bill this next weekend, after we see how much
money we make at the flea market.

Meal Plan July 14th - 22nd



I have finally figured out that doing meal plans on
Monday just not working for us. So going to try and
switch things up and see how doing it a differant day
of the week works for us. So this week is going to be Monday - Tuesday.
Hoping it will smooth things out for us.


I have not been feeling the greatest the last few days.
An in all honesty it doesn't look like I will be anytime soon either.
My legs have been killing me off an on for days,
I have Lymphedema for those of you who don't know.
So I think this week we might be having alot of comfort foods.
I think everyone needs to have them once in awhile.


A friend of mine at the flea market yesterday gave us a HUGE head of cabbage
from her garden, and 2 very large Zucchini.
So going to try and use them up this week too. An I have to go shopping
for some more fruit and veggies. As you will see the menu looks awful spars
of fruit and veggies. But I will change that once I see what is on sale and what I buy.


Also I am not going to be planning Lunchs,
as they never seem to go as planned. We normally have leftovers,
or whatever we make from the pantry or fridge.

Sunday: Tuna Sandwhichs & Pasta Salad (Make on Saturday night)


Monday: Pasta, Jarred Sauce, Garlic Bread & Salad

How Much Can You Stockpile?

Over on HCW, there is a contest to see how much you can stockpile for $5 for the month.
It will be fun to see how well I do along with others.

So I will be updating this post with my totals
along with pics of my receipts.

Mini Grands Pizzas! Easy Meal For Everyone!

These are so easy anyone can make them.
You can even have your kids help you make them if you want.
Take a canister of Pillsbury Grands! and roll each one out
with a rolling pin just like you would cookie dough.


Use pizza sauce, or plain tomatoe sauce and add some spices to it.
I didn't have any pizza sauce, so I just opened a jar of pasta sauce.


Then add whatever toppings you like.
See what you have in your fridge; veggies, leftover meat, etc.
I had some diced red onion, and some smoked sausage that I cut up.
But any fresh or canned veggies would work. Pork, beef, chicken, etc.
would work too. Leftovers work great with this.




Top with shredded cheese, pop in the oven
until the grands are golden brown around the endges,
and the cheese is melted.





Dh loved them, and it was an easy throw together meal.
Next time dh wants me to make them as a buffalo ranch chicken pizzas.

Cucumber & Onion Salad

I remember as a child growing up, living right next door to Grandma.
An every summer she would make this yummy cucumber and onion salad.
It was so yummy! I know she used white vinegar but I am not sure if
she added anything else to it, and if so what.


I will have to go scouring around her old cookbooks that my mom kept
and see if I can find any recipe she might have wrote down
and tucked inside a cookbook. (she was famous for that)


So I took an recipe from the web,
and experimented a little on my own this time.


I chopped my onion and cucumbers this time.
Grandma always sliced hers,
and I found that harder to eat with a spoon or fork.
I used a cleaned out ice cream bucket and lid to marinate them in.

Then add Sugar and stir in well.
The amount of vinegar and sugar really
depends on how much veggies you are going to use.
I add enough vinegar to almost cover all the veggies,
and add sugar to taste.

Online Recipe: 2 cups sugar to 1 cup white vinegar (This is if you like it sweet)
I Recommend using 1 Cup Sugar to 1 Cup Vinegar, or less sugar if you like more sour tang to it.

After it is all mixed up, and ready to go into the fridge for over night.



Make sure to put it in an airtight container, otherwise your fridge is going to smell like vinegar. That is why I also used the washed out ice cream bucket. I am not worried about the vinegar smell on this container, like I would on my good tupperware containers.
Put it in the fridge overnight, and serve with a slotted spoon.
Yum!

I need to remember to look in the fridge. . .

I am sort of mad at myself.
On Monday when I was making our Meal Plan for the week.
I didn't lookin the fridge or the pantry to see what I already had
that I needed or could use up.
Instead I found some yummy new recipes, and thought I would
give them a try. I am all for trying new things, but so many new
things in one week is not a good idea when I have several
things in the fridge,freezer and pantry that I need and could
of used for meals instead.

On a good note, I did make the Dirty rice last night.
Think I might leave out the celery next time.
We are not huge fans of cooked celery in dishes.
But otherwise it was good.

Off to edit the meal plan for the rest of the week.

Meal Plan Monday July 7th - 13th


We had a good but busy and long weekend.
How was your 4th of July weekend?
We are back to our normal weekly routine, and Aaron is on a strange work schedule this week. So trying to plan meals that are easy for him to eat when he gets home late this week is going to be hard.

I have been trying to make extra at dinner, so Aaron has leftovers to
use for lunch the rest of the week. He is not picky, and likes it better then
having salad and sandwiches all week.


Monday:
Lunch- Fend For yourself
Dinner- Ham Sandwhichs, Cucumber & Onion Salad(Recipe To come)

Tuesday:
Lunch- Monday night Left Overs
Dinner- Dirty Rice


Wednesday:
Lunch- Tuesday night leftovers
Dinner- Grands Mini Pizzas, Salad


Thursday:
Lunch- Dinner Leftovers
Dinner- Chicken, Mashed Potatoes, Salad


Friday:
Lunch- Dinner Leftovers
Dinner- Crockpot Taco Soup (Recipe to come), salad, Home baked Bread


Saturday:
Lunch- Cleanout the Fridge Leftovers
Dinner-Date Night- Sweet & Sour Chicken Stir Fry over Rice, Jello with cool whip


Sunday:
Dinner- Crock Pot Potato Chowder

Free Produce! Yay!



This weekend I received all these goodies.
The Onions, Potatoes, and beans were from
my MIL (Hi mom) and the cucumbers and
zucchini where from a friend at the flea market.

This is how I plan to use everything:

Beans: White Chicken Chili (Huge pot, and freeze some)

Potatoes: HashBrowns and ????

Zuccini: Going to use my grandma's recipe and make some Zucchini Bread

Cucumbers: Cucumber & Onion Vinager salad

Onion: Various things (White Chili, Cucumber salad, and I am sure I can find a use for the rest)

Peanut Butter Fingers

Peanut Butter Fingers


You will need:
2 Sticks of Butter
1 Cup of Sugar
1 Cup of Brown Sugar
2 Eggs
2/3 cup (Creamy or crunchy) Peanut Butter
1 Teaspoon baking soda
1/2 Teaspoon Salt
1 Teaspoon Vanilla (I always add a little extra for flavor though)
2 Cups Uncooked Oatmeal
2 Cups Flour

Frosting/Glaze for top:
1 Cup Powdered Sugar
1/2 Cup Peanut Butter
4-8 Tablespoons Milk

Rectangle Cookie Sheet (You need to have a cookie sheet with an edge around it)


Put 2 sticks of butter in large bowl.
Butter needs to be softened, but not melted.
You can let the butter sit in the wrapper
for a good 5-10 min on the counter to soften it
up a bit. Or you can put it in a microwave safe bowl and pop it in the microwave for 10 -15 seconds.










Add 1 cup white sugar & 1 cup brown sugar
to the bowl with the butter.












Use a hand wisk or a wooden spoon,
and cream together the sugars and the butter.





(This is what is should look like after it is creamed together)





Then add to the creamed mixture the following:

2 Eggs
2/3 cup (Creamy or crunchy) Peanut Butter
1 Teaspoon baking soda
1/2 Teaspoon Salt
1 Teaspoon Vanilla (I always add a little extra for flavor though)

Mix with creamed butter above, until smooth





This is what it should look like
after everything has been mixed together.

I did use creamy peanut butter.
If you use crunchy peanut butter,
it will not be as creamy.










Then add:

2 Cups Uncooked Oatmeal
2 Cups Flour

An mix well









Should look like this after the flour
and oatmeal are mixed in.
Of course taste a finger dollop
to make sure everyone will like it.
*wink*
Is super yummy!









Then evenly spread onto ungreased rectangle cookie sheetBake @ 350 degrees for 22-25 min*

Make certain that the cookie sheet you use has
an edge all the way around it.

*This time may vary depending on your stove. Make sure to pull it out when the edges are starting to brown.






While it is cooking,
you can then lick out the bowl
if you feel so inclined. LoL










Warning:
It should NOT be this dark.
I have an very old oven, that is so unpredicatable
it is not even funny. I even set a timer, and pulled it
out before the timer went off.

Just make sure to pull it out of the oven
once the edges are golden brown and a toothpick comes out clean when inserted into the center.

<~~~~ Dh stole a corner even though I told him it was burnt. LoL He said it was still good, and so I just cut off the edges that were really dark.








It is not complete without the frosting on top.
So in a small bowl mix the following:

1 Cup Powdered Sugar
1/2 Cup Peanut Butter (Creamy works best for the frosting)
4-8 Tablespoons Milk (Be careful NOT to add more then this, otherwise it will be to thin and not set)

P.S. Don't mind my orange pop in the corner.
All the baking was making me thirsty. hehe











Should be smooth and creamy, and
a little on the thick side when all mixed together.









Pour it on, and evenly spread it over
all the cookie.
This was a bit thick, but only because
I had cut off the edges that were burnt.










Place in entire cookie on cookie sheet
in fridge, so that the frosting will set up.
Leave it in the fridge for a few hours.

Then bring it out, and cut into long finger
length pieces. Eat & Enjoy!




Taste the best with a tall glass of milk, or some cold vanilla ice cream!!!

JELL-O Patriotic Pie

Happy 4th of July!!!!!!!


JELL-O Patriotic Pie
I made this yummy Jello pie this week,
Aaron took it to work for his work potluck.
Everyone loved it!

1-1/2 cups boiling water, divided
1 pkg. (4-serving size) JELL-O Brand Berry Blue Flavor Gelatin
1 cup ice cubes, divided
1 HONEY MAID Graham Pie Crust (9 oz.)
1 pkg. (4-serving size) JELL-O Brand Cherry Flavor Gelatin, or any red flavor
1 cup thawed COOL WHIP Whipped Topping

STIR 3/4 cup of the boiling water into dry blue gelatin mix at least 2 min. until completely dissolved. Add 1/2 cup of the ice cubes; stir until ice is melted. Slowly pour into pie crust; refrigerate 20 to 30 min. or until gelatin is set.

SPREAD whipped topping over blue gelatin layer.
Refrigerate 15 min. Then put in freezer for 20 min. to set.
Stir remaining 3/4 cup boiling water into dry red gelatin mix in separate bowl at least 2 min. until completely dissolved. Add remaining 1/2 cup ice cubes; stir until ice is melted. Cool 5 min. or until slightly thickened, but not chunky. Slowly pour over whipped topping.
Refrigerate 2 hours or until set.

Keep covered with plastic wrap until ready to serve.
Store leftovers in refrigerator.
You could also alternate differant flavored jello for differant holiday seasons.

Meal Plan Monday

Every Monday I plan out my meals for the week.
It not only helps me stay on track with our budget.
It also helps with using things up in the Freezer, Fridge
and helps me plan our grocery shopping as well.

Monday:
Dinner: Chicken w/ Creamy Spinach pasta

Tuesday:
Dinner: Hot dogs, Green Salad, Baked Beans, Apple Slices

Wednesday:
Lunch: Dh- Soup & Chips Me - Tuna Salad w/ Wheat thins and Pasta Salad
Dinner: French Toast, Scrambled Eggs, Bacon, Juice
Extra: Male Jello Pie for dh to take to work on Thursday

Thursday:
Lunch: Dh - Food Day @ Work (Taking Jello Patriotic Pie) Me - Tuna Salad w/ What Thins
Dinner: Smoked Sausage, Pasta w/ Marina Sauce

Friday:
Lunch: Pasta Salad
Dinner: Sweet & Sour Chicken over Rice & Peas

Saturday:
Will be out of town with family & Friends

Sunday:
Lunch/Dinner: Chicken Spagetti Bake (See Recipe HERE)
